Vegetarian Tomato Stew with “Meatballs”
Datin Jennifer cooks a particular dish called “Vegetarian Tomato Stew with Meatballs”. I love it! I like how the taste is sweet and yet sour at the same time. It’s the perfect thing to eat on a rainy day… a delicious healthy stew with “meatballs”!
I thought that I should share this recipe with everyone… So I got my blog team to video Datin Jennifer cooking the stew so that I can share it with all my students and friends on my blog.

Recipe: Vegetarian Tomato Stew with Meatballs
Serves: 6 people
Estimated cooking time: 1.5 hours
Ingredients
- 600g Vegetarian Meatballs
- 5 Large potatoes (diced chunky)
- 2 Medium size sweet potatoes (diced chunky)
- 1 Large zucchini (diced chunky)
- 2 Big leeks (cut chunky – without the leafy parts)
- 6 Sticks of celery (diced medium)
- 5 Cloves of garlic (roughly chopped)
- 3 Tablespoons of vegetable oil
- 1 Canned diced tomatoes
- 2 Canned tomato sauce
- 1 Small can tomato paste
- 4 Vegetable flavoring cubes
- 1 Teaspoon of dried mixed herbs
- 2 Tablespoons of brown sugar
- Corn flour
- Add salt and pepper to taste
Method:
- Heat a large stock pot, add 3 table spoons of vegetable oil. When the oil is hot, stir fry the potatoes, sweet potatoes, and carrots until it is slightly soften.
- Add all the tomato base – tomato puree, paste and diced canned tomatoes, and pour boiling hot water into the pot until it covers all ingredients.
- Add 4 cubes of vegetable stock and 2 tablespoons of brown sugar.
- Add salt and pepper to taste.
- Reduce the heat of the stove and leave it to boil until the potatoes are tender.
- Prepare a deep frying pan and heat up the oil at a level that is suitable to deep fry.
- Take the mock meatballs and marinate it with salt, pepper and corn flour. Once completely coated, deep fry the meatballs until it turns golden brown in color. Then remove it from the frying pan and drain the oil.
- Once the potatoes are soften, add in the zucchini and let it boil for awhile.
- Then add the deep friend marinated meatballs.
- Continue to boil the stew at low heat until it reaches the consistency that you desire.

WOW!!! What a nice and delicious vegetarian stew with an added bonus of vegetarian meatballs!!!
To be honest I have never never in my life heard of store bought vegetarian meatballs in Malaysia because whoever who has to add a vegetarian product in to their line of meat containing products must have thought that nobody in Malaysia would want to buy vegetarian meatballs when one can so easily get half cows meat half horse meat balls in Ikea.
Although I have not tried this stew made my Datin Jennifer before, just seeing the video and pictures makes my mouth water.
How cool is it now that there are more and more kinds of vegetarian meat like ham, bacon, sausages, beef, and even chicken that now can be enjoyed by a vegetarian because not only is it vegetarian but it also gives you a taste that to me is 5x better than real meat.
When I have the time I would definitively want to try out this recipe for both Rinpoche as well as the Ladrang staff to enjoy.
Datin Jennifer is definitively the number one cook when it comes to making vegetarian food for us which is both healthy and delicious.

Yummy! I totally love Datin’s cooking. She has been so kind for many months, without failing, always going over to Haven once a week to cook for Rinpoche and the Ladrang healthy meals.

Datin Jennifer is so cute! I made a really huge mistake watching this late at night, its starting to make me huungry. Yum Yum!! The stew looks delicious. Datin Jeniffer is definitely a good cook and loves to cook for Rinpoche. She makes it a point to cook for Rinpoche every week. Those times when I was in Haven, I learnt a lot from her whenever she comes.

Thank you for sharing this recipe and video, Rinpoche and Datin. Was watching this at midnight and it was not a good idea as all I could think of is how yummy this stew would be with crusty baguette and butter. Will definitely try this recipe!
This stew looks extremely delicious… and I am not the kind of person who likes to drink stew hehe. Datin Jennifer is always the best of chefs. I really want to learn all I can from her 😀 I was always searching for a recipe for Vegetarian meatballs. It sure beats the horsemeat that is made by Ikea (No offense, just a little joke 😛 )
This definitely look very tasty, I’m sure it taste good too. Vegetarian food can also be very tasty and there’s a lot of variety, it doesn’t mean only green vege and tofu.
Taste the sweet and sour at the same time, isn’t it the same in life? when we are tasting the sweetness, the sourness will come unexpected, it is almost right to each other, just like drinking the soup. Vice versa, when we are going through sour moment, don’t give up, because you will never know when sweetness is going to come.
